Yes, and that is normal. Oak warms and deepens over the first couple of years, particularly where daylight reaches it. If a piece is half in sun, move things around occasionally so it darkens evenly.

Hard-wax oil, applied and burnished by hand. It sits in the timber rather than on top of it, so it feels like wood and can be repaired in place.

A damp cloth and, if you need it, a little soap. Nothing with solvents or silicone, and do not let water sit on the surface.

This is the good news about hard-wax oil. Fine-grade abrasive along the grain, then re-oil the patch and blend it out. Five minutes and it is gone.

Once a year on a surface that works for a living, less on anything that gets lighter use. You will know it is due when water stops beading and starts darkening the surface.
